Breakfast: Apple Cinnamon Oatmeal
After eating pancakes and "bacon" 2 days in a row, it was nice to try something different. Mind you, I am not complaining because that breakfast meal was INCREDIBLE! I have a whole new appreciation for tempeh!

Today, I was finally able to make my
Apple Cinnamon Oatmeal since I remembered to thaw the apple juice concentrate. I have to say I have never made oatmeal "from scratch" before, but now will not make it any other way. What a spectacular flavor this oatmeal had! The recipe called for raisins or currants; I opted for the currants. And I finally put my
McCann's Irish Oatmeal to good use! And of course I added more
cinnamon than the recipe called for because of its many health benefits. YUM is all I can say! You might say, "um, it's just oatmeal, why are you so excited?" Truth be told, I have never been a huge oatmeal lover, which makes me mad because I know how good it is for me. With this recipe, I now have a reason to get excited about oatmeal!
