Day 1 - Lunch


DAY 1
Lunch: Couscous Confetti Salad and Carrot and Red Pepper Soup

All I can say is WOW! One of the best couscous dishes I have ever made, and I have made plenty over the years. Check out the colors of these wonderful veggies (and apricots)...just gorgeous!

This Couscous Confetti Salad was the perfect complement to the Carrot and Red Pepper Soup.

Both dishes took more time than the usual dish because of the vegetable prep time, but it was definitely worth it. I highly recommend both of them!

Great sources of Beta Carotene, fiber, calcium and Vitamin C, too!

  1. Sheryl gave her Dad and me a container of her couscous. I do have to say we really did enjoy it. It is a very colorful dish and even tastes better than it looks. I did split the container with Dad, but I also held a little back. I'm really going to enjoy the last of it this evening. Thanks to my girl for sharing.

  2. Surprised you didn't mention how incredible the roasted pepper carrot soup was. My girlfriend--a vegan--is doing this too and we both loved the soup yesterday. We're enjoying your blog, thanks for sharing.
